Bellingham’s only 100% Gluten Free Bakery. Proudly women owned and family operated. We specialize in delicious artisanal breads and pastries. We’re excited to supply local restaurants, cafes and pantries. Our storefront is open every Saturday and Sunday, 8-2pm!
We cannot wait to share our passion for gluten free baking.
The Women behind Millet,
Clara, Aemilia, and Chloe are three sisters, lifelong bakers, proud locals, and passionate advocates for delicious gluten free baked goods. Growing up in a family of talented bakers and cooks we’ve carried that into our personal and professional lives.
From mild sensitivities to more serious allergies, we’ve each had our own journey with gluten. We know how frustrating it can be to find baked goods that are both safe and satisfying. That’s why we created Millet, a place where everyone can enjoy homemade, from scratch baked goods without feeling left out. We believe that gluten free shouldn’t mean sacrificing quality or taste.
Everything we make is baked with love, using seasonal and locally sourced ingredients whenever possible. Whether you’re gluten free or in the mood for something tasty, we’re honored to serve you.

Our storefront hours will be Saturday and Sunday from 8am-2pm.

We will require at least three full days’ advanced notice to fulfill any custom or large orders. One full week’s notice is ideal if possible. Last minute orders may be fulfilled depending on availability with an added rush charge.

Yes! Our bakery is 100% gluten free. Meaning nothing containing gluten is ever used in any of our recipes, guaranteeing zero cross contamination.

We strive to offer everyone something they can enjoy at our bakery! Vegan and nut free options are usually available.
While we fully sanitize our baking aeras and tools after making something that contains nuts, there are still nuts in the building and may pose a risk to those with serious nut allergies.
